the
beat
Can’t keep up with all those tomatoes and
peppers ripening to juicy perfection in
your garden? Take a salsa break! Fresh salsa
adds fabulous flavor to meals and snacks, in addition to valuable vitamins
and fiber. And best of all, salsa is so low in calories that you can consider
it a free food when you’re counting carbs. The usual chunky red salsa toes
the line nicely, but it’s time to get footloose and step out of the salsa box.
We have a traditional recipe on the following pages, but how about a black
bean combo, a mellow roasted-tomato topper, or a ginger tropical fruit
salsa? You’ll find them here, plus simple recipes that use one of the salsas
as a tasty timesaving ingredient and tips for even faster fix-ups.
